Chicken Soup For The Soul

Cooking Instructions
- 1
Tips: when buying your chicken go with drum sticks. The more yellow the skin the better. I prefer Perdue.
- 2
Boil your chicken. You know your chicken is done when it starts to look like its going to fall off the bone. Don't let your chicken ever go to a Complete boil. The water is your broth. It's precious.
- 3
While waiting for your chicken to boil, cut up your veggies. I like to use 3 large carrot sticks. 3 sticks of celery. And half a onion. (Chopped fine). I like to toss them in salt and pepper.
- 4
Once your chicken is falling off the bone take the chicken out of the water and start to peal it off the bone. Dispose of the skin. Shred the chicken in small pieces.
- 5
Add 2 cans of broth to the water that the chicken was boiling in.
- 6
Add your veggies.
- 7
Keep on medium heat Until veggies get soft. Salt and pepper if needed.
- 8
ENJOY !! :)

When I cook chicken at home, I remove the skin most of the time. So I always cook this with the removed skin. ♪Chicken breast doesn't have much skin, so you need 2 slices. If you use thigh meat, skin from 1 thigh would be enough.I used Japanese leek this time, but spinach or chives are also delicious. ♪ Recipe by OBU cookpad.japan -
