My absolute favorite brunch on weekends. They’re addicting😂
Steps

Chop green onions, grate zucchini, and remove hard stems from kale.

Whisk eggs in a large bowl, then add veggies, herbs, spices, and both cheeses.

Add salt and black pepper to taste, and mix well.

Add flour in 3 parts, mixing well in between.
- 5
Heat 3 tbsp oil in a large frying pan over medium heat.

Form batter into balls and place 3-4 balls into the oil.

Cook about 5 minutes on each side, flattening after flipping, or until crispy and dark golden brown.
