Ingredients

2 servings
  1. 4Eggs
  2. 6Green onions
  3. 1Zucchini (large, grated)
  4. 2 cupsChopped kale
  5. 1 cupGrated mozzarella
  6. 3/4 cupFlour
  7. 2 tbspChopped cilantro or parsley
  8. 2 tbspChopped mint
  9. 1/4 cupCrumbled feta
  10. 1 tspDried dill
  11. 1 tspGarlic powder
  12. 1 tspSumac
  13. to taste Salt and pepper
  14. as neededfor frying Olive oil

Steps

  1. 1

    Chop green onions, grate zucchini, and remove hard stems from kale.

  2. 2

    Whisk eggs in a large bowl, then add veggies, herbs, spices, and both cheeses.

  3. 3

    Add salt and black pepper to taste, and mix well.

  4. 4

    Add flour in 3 parts, mixing well in between.

  5. 5

    Heat 3 tbsp oil in a large frying pan over medium heat.

  6. 6

    Form batter into balls and place 3-4 balls into the oil.

  7. 7

    Cook about 5 minutes on each side, flattening after flipping, or until crispy and dark golden brown.
