Bottlegourd combined with lentils yield delicious recipes. I prepared boiled chickpeas and yellow Moong dal with chopped young bottlegourd. The curry is prepared with usual onion masala paste. The addition of ghee and garam masala powder enhanced the, colour and texture of a well popular vegetable-lauki/dudhi/bottlegourd.

Ingredients

3-4 servings
  • 300 gramchopped lauki
  • 1/2 cupsoaked chana dal
  • 2 Tbspsplit yellow Moong dal
  • 1medium onion chopped finely
  • 2 tspginer garlic poaste
  • 1green chilli chopped
  • 2chopped desi tomatoes
  • 2 Tbspmustard oil
  • 1/2 tspponch phtan
  • 1 pinchhing powder
  • 1/4 tspturmeric powder
  • as per tasteSalt
  • 1/2 tspred chilli powder
  • 1 tspcoriander powde
  • 1/2 tspkasoori methi powder
  • 1/2 tspgaram masala
  • 1 tspghee

Steps

  1. 1

    Soak dals. Heat oil in a kadhai. Add ponch phutan and let them crackle.

    Mix chopped onion and saute till translucent. Add ginger garlic paste and saute till rawness is gone.

    Mix green chilli and tomatoes and cook till tomatoes are soft and mushy.

    Add all dry masala including salt and turmeric.

    Cook on low heat till oil separate from masala. Mix the small chunks of lauki, cover and cook till the lauki soften.

    Mix lauki with boiled dal, adjust the seasoning and allow to boil.

    Mix a spoon of ghee. The delicious bottlegourd dal curry is ready to serve with roti/rice.
