Kopanisti (Greek Cheese Spread)

Hello everyone! this will be the last recipe I will be posting for the next two weeks, it’s that time of year. I would like to wish all that have not yet gone on vacation to enjoy, relax and be safe. Who doesn’t love cheese spreads. There are so many variations of cheese spreads in the greek cuisine, that are so easy to make in just a few minutes, so here is one delicious spread with a few ingredients. Great cheese spread for bread, crackers, fried Zucchini, Aubergine, or anything else you love adding cheese spread on. I know some people who actually put this on their pasta instead of sauces…:) A bit of information about the word Kopanisti the definition is: to beat something (Ko-pa-ni-so)…hahahaha…sometimes the definitions are funny. 🙂
The original recipe comes from the Aegean Islands of Tinos, Syros, and Mykonos. The cheese they use on these islands is not Feta cheese, they use a cheese that they produce called Tyrovolia. The taste is not the same as Feta cheese, it’s similarity is more towards cottage cheese.
Now, this recipe has been tweaked with Feta cheese, and with the delicious mix of yogurt, peppers, and Cayenne paprika, makes it spicy, salty with a mouthwatering taste you will enjoy.

Cooking Instructions

Slice paprika pepper in half. All you will actually need is half of the pepper.

Add into the blender along with the yogurt.

Beat pepper and yogurt.

N a small bowl add the mixture into the feta cheese, and cayenne pepper, mix until it is nicely blended, and that’s it! Simple and delicious. You can make this cheese spread, and eat it right away or it can be put in the fridge for a few days until consumption. 🙂 Ok, so this is it…I will be reading all your posts until Friday and then I'm off….See everyone in September again…

Hello everyone, I am not sure if everyone has heard of the fires that occurred in the Athens area and around Greece these past few days. 🙁 This is a tragedy as lives were lost in these fires. The photos and what I have been told by friends and family are shocking and very sad. We do have family and friends who live in Athens who are well, but we also have a friend who lives in the Mati Area where most of the fires were at high intensity. He did battle to save his home, along with others who were trying to find a save place to hide from the fire. My husband has spoken with him he and his mother are ok. Hey there! I have been busy because the Children’s workshop is coming up next week, and so I have been preparing a few other things to talk about besides just cooking the food and feeding them. 🙂 My friend asked me if I was willing to translate a few words from English to Greek for the children, and I thought that was so sweet. 🙂 Some of the words are Mom, Dad, Thank you, Grandfather, Grandmother, Please, Hello and few more…they will actually have them written on Index cards so that the children will be able to pronounce the words along with me. 🙂 I think this is an amazing experience and very glad to be a part of it. 🙂I am sure you, your friends and family will love this dip! This is my absolute favorite, I think I can say in all honesty that I love this even more than the Greek Roe Fish Dip. I chose a milder pepper for this dip because up and until Tuesday we were having major heatwaves here so I didn’t want to make it super hot.I don’t usually find a milder pepper in the market, so this actually was quite a surprise because the dip had just the right balance that I wanted between the cheese and the pepper. 🙂 Now, if you want to go super hot go for it 🙂 3 simple ingredients make an amazing dip, if you do try this recipe let me know if you liked it!! Hi Everyone!! I wanted to share with you this Spinach Pie recipe that my mom gave me many moons ago. I remember it was hard to find Greek products in our area, so once a month we had a day trip to Astoria. Wow!!! that was a long time ago, anyway we would go to this little Greek Deli Store to buy what she needed for the month. She always had a list ready, (and she still does today) with the usual products. Feta, Coffee, Olives, Oil, classic right! I know!! :0Till this day, whenever I go back to Greece to visit my mom, we go to Athens City Center into the old market area…have a cup of coffee, catch up on things, and then go shopping. In Athens the old Deli’s stores still exist with the cheeses, and spices in huge barrels, sausages, you can even find a huge variety of peanuts, I can go on and on but there are just too many products to write down.So, now for the recipe….:) Hope you enjoy making it!!!
