Buffalo Chicken Dip Stuffed Baked Mushrooms

This recipe came about as a #fridgecleanoutmeal when I had some of my homemade #buffalochickendip leftover to use up and I also had literally 4 #babybellamushrooms left that I wasnt sure what to do with! 😂👍 This particular recipe was made with my attached recipe for the filling but you can use any chicken dip that you like. I also used red onion although you could use any onion you have or none at all depending on preference. I only had a block of pepperjack cheese but shredded would also do just fine or even tearing slices into pieces if that's what you have available! You could further, use any flavor of cheese you prefer as well. Ingredients

  1. 8 ozcontainer whole baby bella mushrooms
  2. 1 cupbuffalo chicken dip
  3. 1/4 cupred onion, finely chopped
  4. 4 ozpepperjack cheese, cubed or shredded
  5. 1 tspsalt
  6. 1 tsppepper
  7. 1 tsponion powder

Cooking Instructions

    First, preheat oven to 425° & wipe the mushrooms with a damp paper towel, or rinse your mushrooms briefly in cool water to remove dust and dirt. Pat the mushrooms dry with a clean kitchen towel. Remove the stems so you have a cavity to fill with stuffing. Then, spray or coat your baking dish & place mushroom caps on baking dish or pan. Sprinkle each one evenly with salt, pepper, & onion powder.

    Next, spoon the stuffing into the mushroom caps. Pack in the filling lightly or generously depending upon your preference.

    Lastly, top each stuffed mushroom cap with a pinch of onion & a small cube of pepperjack cheese or a pinch of shredded pepperjack cheese.

    Bake for 15 minutes or until mushrooms are softened and cheese is melted. Serve & Enjoy! You could top with your favorite hot sauce, green onions, ranch, bread crumbs, whatever you like, or nothing at all! 👌😏👍
