Zucchini usually appears in Western dishes but I wanted to serve it Japanese-style.

Please use very fresh zucchini. Sliced zucchini is very soft so be gentle when rubbing in the salt and squeezing out the water. Recipe by Setsubunhijiki

Ingredients

3 servings
  1. 1Zucchini
  2. 1/2 tspSalt
  3. 1 smallpiece Ginger
  4. 1 tspMentsuyu (3x concentrate)
  5. 2 tbspWater

Cooking Instructions

  1. 1

    Slice the zucchini with a slicer and gently rub with salt. Lightly squeeze the water out and transfer to a dish.

  2. 2

    Dilute the mentsuyu with water and pour over the zucchini. Add the grated ginger on top to finish.
