Ingredients

25 min prep – 45 min baking
Serves 6-8 servings
  • 1 cancorn, drained (about 285 grams or 10 oz)
  • 3large eggs (about 150 grams), at room temperature
  • 1 2/3 cupsyellow cornmeal (210 grams)
  • 1 1/3 cupssugar (270 grams)
  • 1 1/2 cupsmilk, at room temperature (360 ml)
  • 1/2 cupvegetable oil (120 ml)
  • 1 tablespoonbaking powder (14 grams)
  • 7 ozmascarpone cheese (200 grams; you can substitute with any cream cheese)

Steps

25 min prep – 45 min baking

    Gather all the ingredients.

    Use a round or bundt pan. Line the bottom with parchment paper and grease and flour the entire pan with yellow cornmeal. Preheat the oven to 350°F (180°C), top and bottom heat.

    In a blender, combine the eggs, oil, drained corn, sugar, and milk. Blend well, then pour the mixture into a large bowl.

    Add the fine yellow cornmeal and mix with a whisk. Finally, add the baking powder and mix well.

    Pour the batter into the prepared pan. Spoon dollops of mascarpone cheese evenly around the batter. Bake for 45 minutes. Check with a toothpick to make sure it comes out clean before removing the cake from the oven.

    After baking, this is how it should look (the aroma in the kitchen is wonderful).

    Remove from the oven and let cool completely before unmolding.

    Unmold and place on a serving plate. Decorate with powdered sugar.

    Cut a slice.
