Today we're making a very moist, fluffy, and delicious corn cake! It's quick to prepare and turns out fantastic!

Gather all the ingredients.

Use a round or bundt pan. Line the bottom with parchment paper and grease and flour the entire pan with yellow cornmeal. Preheat the oven to 350°F (180°C), top and bottom heat.

In a blender, combine the eggs, oil, drained corn, sugar, and milk. Blend well, then pour the mixture into a large bowl.

Add the fine yellow cornmeal and mix with a whisk. Finally, add the baking powder and mix well.

Pour the batter into the prepared pan. Spoon dollops of mascarpone cheese evenly around the batter. Bake for 45 minutes. Check with a toothpick to make sure it comes out clean before removing the cake from the oven.

Remove from the oven and let cool completely before unmolding.

Unmold and place on a serving plate. Decorate with powdered sugar.
