Ingredients

6 to 9 servings
  1. cake
  2. 1 cupuncooked rolled oats (instant or regular)
  3. 1 1/4 cupsboiling water
  4. 1/2 cupbutter or 1/2 cup margarine
  5. 1 cupgranulated sugar
  6. 1 teaspoonvanilla
  7. 2eggs
  8. 1 1/2 cupsflour
  9. 1 teaspoonbaking soda
  10. 1/2 teaspoonsalt
  11. 3/4 teaspooncinnamon
  12. 1/4 teaspoonnutmeg
  13. Topping
  14. 1/4 cupbutter or 1/4 cup margarine, melted
  15. 1/2 cupbrown sugar
  16. 3 tablespoonscream or 3 tablespoons milk
  17. 3/4 cupflaked coconut
  18. 1/3 cupchopped nuts (optional)

Steps

    In a shallow bowl soak oats in boiling water for 20 minutes.

    Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.

  3. 3

    Beat in eggs and vanilla.

  4. 4

    Sift and measure flour, sifting again with the soda and spices.

  5. 5

    By this time the oats will be soaked and cool. Remove beaters from creamed mixture and fold in soaked oats.

    Sift flour mixture over and fold in.

  7. 7

    Turn in a buttered 9×9″ pan and bake at 350°F for 40-50 minutes.

    Mix all the topping ingredients

    Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.
