Ingredients

  1. 2Chicken breasts
  2. 1 tbspSake
  3. 1 tspSugar
  4. 1/4 tspSalt
  5. 1Oil for deep-frying
  6. For marinating:
  7. 1 tbsp*Soy sauce
  8. 1/2 tbsp*Honey
  9. 1/2 tbsp*Grated ginger
  10. 1/8 tsp*Grated garlic
  11. 3/4 tsp*Salt
  12. 1 dash*Pepper
  13. 1* Shichimi spice (optional)
  14. 1Egg
  15. 9 tbspKatakuriko

Steps

  1. 1

    Cut the chicken breasts into bite-sized pieces and place in a bowl. Sprinkle with the sake, sugar, and salt in that order. Rub in the seasonings and let sit for 1-2 minutes each time.

    Adjust the amount of katakuriko depending on the size of the egg. Adjust the consistency of your batter.

    ※ If you have time, let the marinade sit for a while. The flavors will settle into the chicken better.

    Deep-fry the Step 2 chicken at a slightly low temperature. (If you deep-fry it at a high temperature, the breading will get burnt quickly.)
