I wanted a whole chicken to use in different ways throughout the week. So here it is.

Make sure your chicken has thawed well before seasoning then make tiny incisions into the flesh

For this recipe, you're going to have to eyeball your seasoning amounts and adjust according to what flavour you want to come out more

Mince the garlic and spread all over the chicken

Sprinkle generous amounts of oregano, basil and paprika all over the chicken making sure you coat all sides.

Sprinkle salt and pepper to taste

Rub the butter underneath the chicken skin and on top of it as well, this helps it to get that nice golden brown crispy skin and adds flavor too

Mix the soy sauce, ketchup, sugar and a sprinkle of salt. Mix well and taste adjusting to your preference as some soy sauce may be more overpowering than others. Pour over chicken

If using a whole chicken you can chop the onion into big pieces and place into the chicken. If using pieces, the onion can be chopped up and placed over the chicken halfway through cooking.

Roast in the oven on medium heat until the chicken is fully cooked.

Once ready, leave the chicken to rest for at least five minutes before serving with your favourite side dishes
