Cooking Instructions

Using a dough mixer, add everything in the bread dough list and let the machine does it work, about 30 minutes

After it's done with making the dough, let it rest for 60 minutes or double its size

Meanwhile making a coffee topping, start by mixing "granulated sugar" and "beaten egg" together until smooth then add "soften unsalted butter" and mix well

Sift in "all-purpose flour" and continue mixing

Add "hot water" to "instant coffee" until all melted and then add on to the coffee filling part and after done mixing it, let it sit in the fridge waiting for the bread dough part

When the dough rises double its size, punch it a few times to release the air then make them into 8 round pieces

Add "a cube of unsalted butter" into each dough (8 cubes for 8 doughs)

Let them rest for 15 minutes

Take out the "coffee filling" from the fridge and pipe it on top of the dough

Bake at 170C for 20 minutes (For me though I added more coffee filling on top and did bake it the second time for 5 minutes so it turned out this way- two shades of coffee brown)

Let them cool before packing them away or enjoy

I only just heard the this Mexican Coffee Bun is not actually Mexican but Asian. I'm not really sure about this, but the website I saw stated that. Cookie dough on bread is actually quite normal here where I'm from (Polo buns are an example). My brother used to love these Rotiboy, as we call them, and we would have it at least three times a week for breakfast.
