My Roasted Dijon & Herbs Lamb Chops 😋

Heat up oven 175°C

Add salt and pepper on the lamb, in a skillet add the veg oil and sear the lamb chops all over until coloured.

Mix together in a bowl the mint,lemon,veg stock cube crumbled in,lemon zest,parsley,rosemary, and black pepper. Drizzle over the top with the extra virgin oil

Add the lamb to a tray and cover in the Dijon mustard

Next add the mix all over the lamb cover with foil and bake for 20 minutes.

Take out the oven let it settle a little then uncover and serve with Mashed potato and sweetcorn.
