Place the nixtamal in a pot with boiling water.

After boiling for 30 minutes, add the green onions and a whole head of garlic.

Once the corn has cooked for 1 hour, add the chicken.

Blend 1/4 onion, 8 garlic cloves, 1 tablespoon oregano, 2 tablespoons chicken bouillon, and 1 cup water (about 240 ml).

Pour the blended mixture into the pot with the corn.

Add 1 1/2 tablespoons salt.

Once the chicken pozole is ready, prepare the toppings.
