Ingredients

3-4 Persons
  1. 1/2 KgPrawns (Big sized, cleaned and Shell Retained
  2. 1/2 KgBasmati Rice
  3. 2Big Onions, Finely Chopped
  4. 1Big Tomato, Finely Chopped
  5. 2Potatoes, Cut in half and Lightly Fried (Optional)
  6. 1 CupFresh Peas
  7. 2Green Chillies, Slit
  8. 1 tbspGinger-Garlic Paste
  9. 1 tspCoriander Powder
  10. 1 tspCumin Powder
  11. 1/2 tspGaram Masala Powder
  12. 1/2 tspDried Mango (Amchur) Powder
  13. 5-6Curry Leaves
  14. 2Bay leaves
  15. 2" stick of Cinnamon
  16. 2-3Cardamoms (small)
  17. 1Large Cardamom
  18. 5-6Black peppercorns
  19. 3-4Cloves
  20. 1 tspCumin Seeds
  21. 1/4 tspBlack Cumin Seeds (Shahjeera)
  22. 2 tbspCurd
  23. 1/4 tbspTurmeric powder
  24. 1 tbspRed Chili Powder
  25. as per tasteSalt
  26. as required Water,
  27. as required Coriander leaves, Finely chopped
  28. as required Deep fried onion (Birishta) for garnishing
  29. 3 tbspOil

Steps

  1. 1

    Clean and wash the fresh prawns. Retain the shell and keep aside.

  2. 2

    Heat the Oil in a Kadhai. Add the whole garam masala, curry leaves and slit green chillies. Add the chopped onions and fry until light brown in colour. Add the finely chopped tomatoes and ginger garlic paste. Fry until the smell of the ginger and garlic goes away.

  3. 3

    Add all the powdered spices and cook for half a minute. Add the curd to this mixture and mix well. Add the prawns, Salt and cook well for 5 mins. Add the Fresh Peas and the lightly fried Potato Halves and cook well for another 2-3 minutes.

    Once the oil starts leaving the sides, Add hot water and let it come to a boil.

  5. 5

    Add the washed and soaked rice to the boiling water. Adjust the salt as per taste and cook until the rice is completely done.

  6. 6

    Garnish with Finely chopped fresh Coriander and deep fried onions. Serve with a wedge of lime.
