I made this when I forgot to buy ponzu.

There's really nothing to it!
Of course, if you have yuzu or sudachi citrus on hand, those would make great (if not better) substitutions for the lemon. Depending on the brand or type of soy sauce, it could get a little to salty for your taste, so try adjusting the amount as you go.

Ingredients

1 serving
  • Ponzu without Lemon
  • 4to 5 tablespoons Soy sauce
  • 2 tbspVinegar and an optional 5 cm square sheet of kombu seaweed for the stock
  • 2to 3 tablespoons Mirin
  • 1/2 tbspSugar
  • Lemon Ponzu
  • 4to 5 tablespoons Soy sauce
  • 3 tbspLemon juice (fresh is best, but bottled is okay)
  • 2to 3 tablespoons Mirin
  • 1/2 tbspSugar
  • 5 cmsquare sheet Kombu seaweed for dashi stock (optional)

Steps

    The type of vinegar (100% rice, rice blend, grain, etc) used will differ. Chose whatever you prefer.

    Also, this recipe makes a slightly sweet sauce, so for those who don't like it sweet, reduce or eliminate the sugar.

  3. 3

    Put all the ingredients into a sauce pan, bring to a boil, then immediately remove from the heat. After it cools down, it's ready to be use.

    For those who are in a hurry, you can serve it without heating. I'm usually pressed for time, so I generally use it as is.

    For times when you don't have any lemons, just make it without it. It's not too bad. (I'm sure the photo doesn't help much. tee hee)

    If you don't have any dashi kombu, then leave it out Since this is for times when you're in a bind, just use whatever you have.
