Nido Oriental Soup with Chicken and Elbow Pasta • Chinese Egg Drop Soup

Nido Soup is the Filipino version of the Chinese Bird’s Nest Soup. Since the ingredient is hard to come by, Knorr created a soup packet that mocks this delicious gelatinous soup. Find one or something similar in your neighborhood Asian store. 😋

Cooking Instructions
- 1
Bring water to a boil in pot. Then add your elbow pasta.
- 2
Cook 7 minutes then lower to a simmer. Start adding the Knorr packet slowly and stir constantly. Some of the powder would form into lumps, squish and stir with a spatula.
- 3
Take out your leftover chicken and cut into strips with your fingers or scissors. Or cook some chicken breast beforehand.
I used leftover spicy roast chicken and this made the soup delicious!
- 4
Add the chicken and continue stirring gently until lumps have dissolved.
Taste and add a little more water if the chicken made the soup saltier.
- 5
Lastly, add a beaten egg to the pot while stirring it with a fork so the egg would cook into those pretty white streaks.
- 6
Serve hot. Enjoy as a side, main or as an afternoon snack.

I loved the egg drop soup served at elementary school and made this soup reminiscing about it. Now this is our dinner staple.Eggs can be hard and tough in texture when over cooked or reheated. Fluffy Egg-Drop Soup with Boiled Chicken Broth Fluffy Egg-Drop Soup with Boiled Chicken Broth
This was an egg-drop soup that I made as baby food for my children, but they still love it even now that they are grown-ups. When I don't have cooking liquid from boiling chicken, I use Chinese chicken stock granules. Making the eggs fluffy is key to the delicious taste of this soup! The katakuriko slurry can be made by dissolving the katakuriko in twice the amount of water - water (2 tablespoons) + katakuriko (1 tablespoon). Add it gradually and slowly while stirring the soup (do not add it all at once) until reaching your preferred thickness. You don't need to use the whole amount. Add the eggs after the soup has thickened. Recipe by Heartful Kitchen Rei cookpad.japan -
