Banana bread is a big deal in Sydney. Every cafe sells it, usually toasted and with butter. It forms an integral part of the Sydney cafe scene (and throughout Australia). I like the addition of spelt flour for a more dense, earthier flavour and I sweeten only a little with honey, just enough so that the spelt and banana flavours shine through.

Ingredients

50-60 minutes
1 loaf
  • 3small, ripe bananas
  • 90 goil
  • 100 gspelt flour
  • 160 gwholemeal flour
  • 3medium eggs
  • 1.5 tspbaking powder
  • 1 tspcinnamon
  • 70 ghoney
  • 120 ggreek yogurt

Steps

50-60 minutes
  1. 1

    Turn on the oven and preheat to 180 C

  2. 2

    Butter a loaf tin

  3. 3

    Mash the bananas

  4. 4

    Add oil and honey to the mashed banana and mix well

  5. 5

    Add flours, baking powder, cinnamon and mix

  6. 6

    Incorporate the eggs and then the yoghurt

  7. 7

    Pour mixture into the loaf tin and bake in oven for 50 minutes. Check its cooked by inserting a knife. It might need another 10 minutes

Many years ago, I was a chef. I worked in restaurants, pubs and on an outback farm and travelled extensively through SE Asia. As time has gone on, my cookery style has developed to appreciate the simple and traditional over the fancy and complex.
