  • 2 1/2 cupsflour (about 1 1/4 cups buckwheat flour and 1 1/4 cups cornstarch) (300 grams: 150 grams buckwheat, 150 grams cornstarch)
  • 4eggs
  • 1/4 cupvegetable oil or melted margarine (about 1 3/4 ounces or 50 grams)
  • 3/4 cupplant-based cream (such as soy or rice) (about 6.8 ounces or 200 ml)
  • 2-3 1/3 cupsplant-based milk (about 17 to 27 ounces or 500 to 800 ml)
  • 1 pinchsalt
  • 2 tablespoonsground flaxseed (optional)

    Place all ingredients except the plant-based milk in a large bowl and blend until smooth.

    Gradually add the plant-based milk while blending until the batter is smooth and fluid.

    Cook the crêpes in a nonstick skillet until all the batter is used up.
