Ingredients

Serves 4 servings
  • 1 lbchicken thigh bones (about 500 grams)
  • 1medium onion, finely chopped
  • 5 clovesgarlic, finely chopped
  • 2 tablespoonsginger, finely chopped
  • 2 tablespoonsvegetable oil
  • 2 tablespoonschicken bouillon powder
  • 1 cupwhite rice (about 200 grams)
  • 6 cupswater (about 1.4 liters)
  • 1small bunch green onions
  • 3red chile piquín peppers
  • 1 cupcrushed pork rinds (chicharrón)
  • 1/2 teaspoonground black pepper
  • Salt, to taste

    In a large skillet, heat the vegetable oil over medium heat. Sear the chicken bones for about 15 minutes, or until lightly browned. Remove and set aside.

    In the same oil and pan drippings, sauté the onion, garlic, and ginger for 3 minutes. Add the ground black pepper and cook for 1 more minute.

    Add the rice, chicken bouillon powder, water, and chicken bones to the pot.

    Cover and simmer for 30 to 35 minutes, or until most of the broth is absorbed.

    Serve topped with chopped green onions, finely chopped chile piquín, and crushed pork rinds. Add salt to taste.
