This recipe is vegan and absolutely delicious. I paired my zoodles with fried tofu.
Steps

Start by washing your zucchini and then spiralize it. I cut mine into half and then spiralized it

In a food processor combine the avocado, 2 tbsp sunflower or olive oil, spinach, pine nuts, lemon juice and minced garlic purée till smooth

Heat a large pan on medium heat with the remaining 1 tbsp oil, add in your zucchini and sauté for 3-5 minutes.

Add in the pesto, add a little at a time till desired amount is achieved. Sauté for a minute and plate, add halved tomatoes on top and any extra pine nuts.
