I have earlier shared Oats and Chicken Soup as well and this is completely Vegan.
You can use your favourite Vegetables or whatever is handy.

In a cooking pot, heat butter on a low flame. Saute the garlic mince. Add all the veggies to it now along with the chilli garlic sauce. Saute all for 2 minutes and then add the oats.

Stir fry the oats for a minute and add enough water. Simmer on low to medium flame and add more water if required. After 20 minutes of simmering, it's almost done.

Do not cook much because the veggies will be too mushy and soft. The Soup should retain the crunch of the veggies. Adjust salt and pepper according to taste. Also add a bit of Vinegar or Lemon juice. Simmer for 5 more minutes until a desired thickness is reached.

Serve hot garnished with chopped coriander.
