Halloumi ( Cheese ) is very popular in the Mediterranean and the Middle East.
Halloumi or haloumi is a semi-hard, unripened cheese with origin in Cyprus made from a mixture of goat's and sheep's milk, and sometimes also cow's milk. It has a high melting point and so can easily be fried or grilled, a property that makes it a popular meat substitute and a good source of protein and Calcium.
This is a very quick and easy nutritious and healthy salad with the goodness of Halloumi, Vegetables and mixed seeds and a light dressing of Extra Virgin Oil, Za'atar and Sumac !

Prepare the salad greens/ Vegetables on the plate. Pat dry the Halloumi. Heat the grill pan, brush it with Extra Virgin Olive oil and place the halloumi on it and grill each side for 2-3 minutes.

Place it on the plate with salad. Sprinkle seeds on top. Drizzle Extra Virgin Olive oil, Za'atar, Sumac or Lime juice and serve it

. You can have this alone as a wholesome meal or share and have it with Pita Bread (preferably Whole-wheat flour Pita) with one more person.
