Karela sabji for picnic or travel (konkani style)

Wash and chop bitter gourd into small squares.

Take oil in a kadai. Deep fry the bitter gourd pieces till crisp.

Grind half bowl coconut, 4 to 5 red chilies and 1 inch piece tamarind with little water to form a smooth paste. Don't make it too watery.

In a kadai take 1 tbsp oil. Add 1 onion chopped fry till brown. Add the fried bitter gourd pieces and ground coconut paste. Add salt to taste. Mix well. Fry till completely dry.(I have not fried it till dry as it was for immediate consumption). It should be further fried for 2 to 3 minutes until completely dry. Then the sabji will be dark brown in colour.
