Steps

Wash the rice and soak it in plenty of water. Set aside

In a pot, heat the oil and cook the onions until soft and translucent

Add the cloves, ginger, cinnamon, cardamon and bay leaves. Cook until the onions become golden brown

Add the salt and the chicken pieces. Stir and let the chicken cook until the meat turns white

Pour the water in the chicken, let it boil and simmer at low heat for about an hour

By now, the rice will have expanded and turned white. Drain the rice and set aside

Sieve the stock into a large cooking pan. Discard the ginger, bay leaves and onions. Carefully pick the chicken pieces and put them back into the stock

Let the stock boil again then add the rice. Stir and cook at medium low heat until all the water evaporates. Make sure to stir the rice every now and then but don't break the grains.

Cook on low heat for about 5 minutes until all the steam comes out

Serve as desired.
