Ingredients

  1. Velvet Chicken
  2. 1 lbsChicken Thigh
  3. 1.5 Teaspooncornstarch
  4. 1 teaspoonshaoxing wine
  5. 1/2 teaspoonbaking soda
  6. 2 teaspoonsugar
  7. 1/2 teaspoonkosher salt
  8. 1 teaspoonlight soy sauce
  9. 1egg white
  10. Vegetables
  11. 1onion
  12. 1green bell pepper
  13. 1red bell pepper
  14. 10 Ozcan pineapple
  15. Aromatics
  16. 4 clovesgarlic
  17. 1/2finger ginger
  18. Sauce
  19. Pineapple juice from 10 Oz can
  20. 3 tablespoonsketchup
  21. 2 tablespoonswhite vinegar
  22. 1 tablespoon+ 1/2 teaspoon sugar
  23. 1 teaspoonsoy sauce
  24. Splashshaoxing wine
  25. 2 teaspooncornstarch

Cooking Instructions

  1. 1

    VELVET CHICKEN
    - Simmer 1 qt water in wok
    - Add chicken piece at a time
    - Cook 30-60 seconds
    - Remove to sheet tray to dry

  2. 2

    STIR FRY
    - Longyau
    - Stir fry onion and bell peppers
    - Push to side, add oil and aromatics
    - Stir fry ~30 seconds
    - Add chicken, pineapple, (optional) cashews, and sauce
    - Cook until desired thickness
