Often referred to as the Prophet Muhammad’s favorite dish, this satisfying lamb and vegetable stew is served over thin, cracker-like bread called regag to soak up the rich juices (although I have used mutton and toasted roti to work just as well).Tharid is the Arabian Gulf dish made with a lot more bread and topped with a hearty meat and vegetable stew.

Place the meat, salt and water in a large pot and bring to a boil (I pressure cooked with 3 whistles) over medium heat. Drain off the broth and pour the same amount of clean water over the meat. This will ensure you have a clean-tasting broth.

Combine the tomatoes, fresh ginger, garlic and 1 onion in a blender and mix until completely puréed. In a pot add oil, cloves, cinnamon stick, cardamom and saute some onions till slightly brown, add the tomato purée, bay leaves, chillies and roast nicely. Add the boiled mutton pieces and cook nicely.

Add the diced carrots and potatoes and cook.Add the zucchini and cook for 10 more minutes. Add water and reduce the heat to maintain a gentle simmer and cook, uncovered, until the mutton is tender, about 11/2hour.

Break up 2 sheets of roasted wheat flour roti in a shallow serving dish. Pour enough mutton broth over the bread to let it become soft but not soupy. Spread another layer of broken bread and add more broth. Make another layer, softening the bread with broth until you have a fairly thick layer of moistened bread.

Arrange the meat and vegetables over the bread and serve immediately.
