The #easternredbud tree with its seed pods & pretty pink flowers is related to the pea plant! It's native to where we live & this year I found out that it's EDIBLE! 👏🥳🤩 I foraged these seeds from our backyard tree! 😎👍 Foil potato packs, whether grilled or baked, are definitely "a thing" in our neck of the woods as well! 😁👍 Additionally, this year we grew way too many banana peppers & jalapenos in our garden & I'd been looking for things to do with them! 🤦🏻‍♀️😂 We also had some delicious carrots & purple beans (that turn green when cooked 🙄👌 for anyone who doesnt know!😂) from our local farm market & they all worked beautifully together! These were a bit Spicy 💥🔥 but very Yummy! You could leave out the hot peppers if you dont enjoy the heat.🤷🏻‍♀️👌 You could also try this with whatever seeds are native to your local area as well! 😏👍 #potatoes

Ingredients

  1. 1/2 cupredbud tree seeds
  2. 10-12small-medium red skinned potatoes
  3. 3-4medium carrots
  4. 2medium yellow onions
  5. 6 cupspurple or green beans
  6. 3-6small or medium jalapenos
  7. 3-6small or medium banana peppers
  8. 12 tspchopped basil
  9. 12 tspchopped cilantro
  10. 6 tbspchopped green onion or chives
  11. 2-3 sticksbutter or margarine
  12. 7 tspsalt
  13. 6 tsppepper
  14. 6 tspgarlic salt
  15. 6 tbspseasoning salt

Cooking Instructions

    Forage for an Eastern Redbud Tree! 🌸🌳🌸

    Pick your seed pods & remove the seeds. Wash & then Soak them in water with 1 tsp salt for a few hours minimum.

    Pre-rip 6 pieces of foil that are 12×14 inches. Place them on a flat surface.

    Wash & Cut potatoes, carrots, & onion into 1×1 inch pieces. Place about 1 cup of cut potatoes, 1/2 cup of onions, & 1/2 cup of carrots onto each piece of foil. Leaving about 2-3 inches of foil space around the edges. Also, Add 1 tbsp of seeds to each pile.

    Next, Wash & Cut beans & slice or dice peppers. Add to each pile, 1 cup cut beans & 1/4 cup or less of each kind of hot pepper.

    Add 2-4 tbsp of butter to the top of each pile. Then, chop basil, cilantro, & green onion. Add 2 tsp basil & cilantro & 1 tbsp green onion to the top of each pile as well. Lastly, add your seasonings on top. For each pile use 1 tsp salt, 1 tsp pepper, 1 tsp garlic, & 1 tbsp seasoning salt.

    Finally, fold all 4 sides of the foil up over the piles to cover them. Then wrap an additional piece of foil around the pack to cover completely. Once secured, place foil packs butter side up onto grill or into oven. Let cook for 30 minutes. Then flip & cook for additional 30 minutes. When potatoes are softened remove packs from heat & let cool. Enjoy!

Western redbuds are native trees here, eastern redbuds grow well too, as ornamentals in peoples gardens, both have edible seeds in pods, thank you for the tip!
