Okonomiyaki

Okonomiyaki is a casual Japanese food cooked on an iron griddle. 'Okonomi' means 'your choice' and 'yaki' means 'cook or grill'. As this word suggests, many kinds of styles of Okonomiyaki are available in Japan. The famous ones are Kansai style and Hiroshima style.

Sift the * ingredients in a bowl and pour soy sauce and dashi (in several divided times) and mix well. If you have time, leave to rest for 2-3 hours in the fridge.

Put cabbage, red pickled ginger into the mix from step 1 and mix 20 times. And then put in the egg and mix 10 times.

Heat the oil in a frying pan over medium heat and pour in the mixture. Place slices of pork on top and cook it for about 5 mins with lid until well browned and flip over.

Cook on the other side for 5~6 mins with lid. And flip over again and cook for 2~3 mins without lid.

Pour Worcester sauce and mayonnaise over it and garnish with dried bonito flakes and green laver as much as you like.
