Ingredients

2 servings
  • 200 gcabbage (mince into 1 cm cubes)
  • 100 gpork slices (belly is good but use a part suited to your taste)
  • 1 Tbspred pickled ginger, chopped (to taste)
  • *80 g flour
  • *1/2 tsp salt
  • *1 tsp sugar
  • 1 tspsauce
  • 120 mldashi (or 120ml water + 2 tsp dashi powder)
  • 1egg
  • 1 Tbspsesame (vegetable) oil
  • For topping (as much as you like):
  • Dried bonito flakes
  • Green laver/aonori
  • Mayonnaise
  • Worcester sauce

    Sift the * ingredients in a bowl and pour soy sauce and dashi (in several divided times) and mix well. If you have time, leave to rest for 2-3 hours in the fridge.

    Put cabbage, red pickled ginger into the mix from step 1 and mix 20 times. And then put in the egg and mix 10 times.

  3. 3

    Heat the oil in a frying pan over medium heat and pour in the mixture. Place slices of pork on top and cook it for about 5 mins with lid until well browned and flip over.

  4. 4

    Cook on the other side for 5~6 mins with lid. And flip over again and cook for 2~3 mins without lid.

    Pour Worcester sauce and mayonnaise over it and garnish with dried bonito flakes and green laver as much as you like.
