Chilled Pasta with Oranges, Scallops, and Mint

I love the combination of oranges and seafood. Adding mint leaves makes this pasta dish very refreshing.

-The key is to pour some extra virgin olive oil over the pasta right before eating.
This improves the aroma and makes it even more delicious.

Ingredients

2 servings
  • 160 gramsPasta
  • 8Raw scallops
  • 1Orange
  • 2 tbspOlive oil
  • 2 tspMinced mint leaves
  • 1 tbsp★ White wine
  • 1/2 tsp★ Lemon juice
  • 1/2orange's worth ★ Orange juice
  • 1orange's worth ★ Grated orange peel
  • 2heaping teaspoons ★ Honey
  • 1 tsp★ Coarse salt
  • 1/4 tsp★ Coarsely ground black pepper
  • 1Extra virgin olive oil

Steps

  1. 1

    Combine and mix all the ★ ingredients well.

    Remove the orange flesh from the membranes. Cut them in half. Chop the scallops in half.

    Heat the olive oil in a frying pan. Add the scallops and lightly sauté both sides. Add the sauce from Step 1 and bring it to a boil. When it boils, turn off the heat and transfer to a bowl.

    Add the oranges and minced mint leaves to the bowl from Step 3 and toss lightly. Chill well in the fridge.

    Cook the spaghetti. When done, drain well and rinse under cold water to firm it up.

  6. 6

    Drain the pasta well, then add it to the chilled sauce from Step 4 and toss everything together. Dish it up.

    Sprinkle some extra virgin olive oil on top, and enjoy.
