Chilled Pasta with Oranges, Scallops, and Mint

I love the combination of oranges and seafood. Adding mint leaves makes this pasta dish very refreshing.

Combine and mix all the ★ ingredients well.

Remove the orange flesh from the membranes. Cut them in half. Chop the scallops in half.

Heat the olive oil in a frying pan. Add the scallops and lightly sauté both sides. Add the sauce from Step 1 and bring it to a boil. When it boils, turn off the heat and transfer to a bowl.

Add the oranges and minced mint leaves to the bowl from Step 3 and toss lightly. Chill well in the fridge.

Cook the spaghetti. When done, drain well and rinse under cold water to firm it up.

Drain the pasta well, then add it to the chilled sauce from Step 4 and toss everything together. Dish it up.

Sprinkle some extra virgin olive oil on top, and enjoy.
