Don't you crave for a thin and cold spaghetti dish when it's hot outside?
This cold pasta dish has become a regular menu at my house.
It's so easy and delicious.
You can make it even more amazing and healthier by adding baby leaves.

Chill all of the ingredients as much as you can before using.
Since I made this recipe as a party dish on a large plate, toss everything together vigorously and serve on a smaller plate.
I recommend using a transparent large plate for an even better cooling effect.
This pasta goes really well with dry sparkling wine. Recipe by LiLiCo2

Ingredients

4 servings
  1. 300 gramsSpaghetti (1.3 mm)
  2. 1packet Enoki mushrooms
  3. 4Tomatoes
  4. 1 packagesMozzarella cheese
  5. 1packet Cured ham
  6. 3 tbspExtra virgin olive oil
  7. 1Basil sauce
  8. 1Salt

Cooking Instructions

    Bring out the ingredients.

    Add some salt in a decent amount of hot water. When it comes to a boil, cook the pasta for 4 minutes. Also cook the enoki mushrooms together with pasta to bulk it up.

    When done, drain in a sieve and rinse lightly. Add the extra virgin olive oil and toss everything together. Chill in the fridge for minimum 10 minutes.

    While the pasta is in the fridge, dice the tomato and mozzarella cheese into 1 cm cubes. Remove the seeds from the tomatoes to your preference.

    Transfer the cold pasta into a transparent dish. Dish up the cured ham, tomato, and mozzarella cheese. Drizzle the basil sauce to finish!

    Toss everything together right before serving, share, and have fun!

    Here's a variation with baby leaves on top... Voila! A delicious pasta dish!
