Ingredients

Serves 30 to 40 people
  1. 2.2 lbs (1 kg)fine brown bulgur for kibbeh, soaked for about 1 hour and kneaded very well
  2. 2.2 lbs (1 kg)lean beef, finely pounded
  3. 10.5 oz (300 g)ground beef for the filling
  4. Mixed nuts
  5. 1.1 lbs (500 g)onion, finely chopped
  6. 1 tablespoonseven spice blend
  7. Salt and black pepper to taste
  8. Ready-made kibbeh spice mix
  9. Kibbeh spice mix includes:
  10. Cumin
  11. Marjoram
  12. Basil
  13. Dried mint and fresh mint
  14. 1dry onion
  15. A fewstalks of green onion
  16. Dry brown bulgur

    Combine the soaked bulgur with the pounded beef and knead them together. Add the prepared kibbeh spice mix and knead again until well combined. The kibbeh dough is now ready.

    Toast the mixed nuts in a pan.

    Add the chopped onions.

    Add the ground beef.

    Add the seven spice blend and black pepper.

    Now the filling and kibbeh dough are ready.

    Shape the kibbeh into small balls and form them as shown.

    You can also use the kibbeh dough for baked kibbeh in a tray: spread a layer of kibbeh, add the filling, then cover with another layer of kibbeh.

    This is the pounded beef.

    You can also use it for kibbeh in yogurt: bring yogurt to a boil, add 1/2 cup Egyptian rice and some cornstarch, cook until the rice is done, then add the kibbeh, either fried or raw.

    Fry the kibbeh and serve as you like.
