Ingredients

large crowd!
  1. 8 cupsflour + 8 cups teff
  2. 8 cupswater
  3. Add starter OR 1 c. warm water with 1 tsp yeast
  4. Part 2: 2 c. Flour, 1 Tbsp baking powder, 1/2 tsp salt

Cooking Instructions

    Mix flour and teff with water. Add starter and mix. Place in large liddedpot in earm place overnight.

    Part 2: 3-4 hours before making injera, mix 2 c flour, bkng powder and salt; whisk in 2 cups hot water. Once well-mixed, add to batter and let sit until ready to cook.

    Heat Swiss Diamond pan, spread 1/2 cup batter in pan, let cook until bubbled and dry pn top. Remove and allow to cool on towel-covered flat surface. Stack once cooled.

    Store leftovers in freezer or in fridge, covered well to prevent drying. Microwave in towelfor a few seconds to eat leftovers.
