Laura's Roast

My grandpa used to make this delicious vegetarian roast for special family holiday meals. My mother has carried on the tradition, and now I've started to make it. Oh, I should mention, we don't have any idea who Laura is/was. But thank you, Laura.
I almost always double the recipe and add a little oven time. It's always very popular, and if it doesn't disappear, it's great as leftovers.

Sauté the onion, celery, chicken seasoning, poultry seasoning, and basil.

Whisk the eggs; mix in water, milk, seasoned salt, Accent, cracker crumbs, and breadcrumbs.

Combine everything in a bowl and mix well.

Pour into a casserole dish. Bake in a water bed at 350F for 30 minutes, then outside the water bed for an additional 15-30 minutes until golden-brown.
