Coffee Pudding

From the day, when we announce Pudding, I feel like to make everyday a new pudding. Because I have never ever tried any other pudding except caramel. It’s a big challenge for me. I searched and found an interesting recipe of coffee pudding. My husband loves Coffee so I knew he will definitely say YES to it. I made it and give a big surprise to him. He loved it!!! Infact, he said that it is way better than the Kopiko coffee. I made it with half measurement about 2 person serving. But Now this creation is my family’s favorite so next time will make it double.
Just wanted to add here… It is so creamy and sweet. Coffee fanatics will love it 😊

Prepare all the ingredients on the table top. Crack 2 eggs and separate the yolks in a bowl. Pour egg yolks mixture in a bowl and pour milk.

Add coffee in the mixture and start whipping.

Whip till the coffee mixes well. And it turns the color too.

Take a pan, and add granulated sugar, cornstarch and salt.

Turn on the flame and stir it with whisk slowly. Keep the flame low.

Sugar has started melting. Keep stirring it.

Once it melts properly, and turn it colors to light pale pour egg mixture slowly slowly and keep stirring it.

When it turn to creamy texture add butter cube and and again mix it. Flame should be very low.

In the mean while prepare the strainer and bowl. Once it turns to creamy texture as well as there is no lump…strain the whole mixture.

Additional thing will be catches by strainer and soft smooth coffee pudding fully strained.

Pour it in serving bowls or glass or anything of your choice. Tap it or circulate it on counter to make the pudding settled in glass.

Keep it in the fridge at least overnight. You can serve without cream.

Or for more decoration I preferred whip cream. Serve chilled and enjoy creamy sweet coffee pudding for your dessert table.
