Ingredients

12 pancakes
  1. 1 cupboiling water
  2. 3/4 cupcornmeal
  3. 1 1/4 cupbuttermilk
  4. 2eggs
  5. 1 1/2 cupsall-purpose flour
  6. 1 tablespoonbaking powder
  7. 1 tspsalt
  8. 1/4 tspbaking soda
  9. 1/4 cupvegetable oil

Cooking Instructions

    Pour the boiling water over the cornmeal. Mix and let it sit for 5-10 minutes.

    Whisk in buttermilk and eggs.

    In a separate bowl, sift together the flour, baking soda, baking powder and salt.

    Fold the flour and oil into the cornmeal and stir to combine.

  5. 5

    Fry the pancakes on a preheated griddle at medium heat for 3-4 minutes on each side.

    Serve with honey and/or berry jam.
