Mumbai,kokni muslim style of Prawn Biryani here using unpeeled baby potatoes with kokam,onion tomatoes curry leaves with ginger garlic tempering to start. A juicy paste added to potatoes n prawns cook on slow in ther own juices .Basmati dubar rice par boiled .Layered rice with 2tbln saffron milk and the prawn masala topped with another layer or rice and fried onions to garnish. Sumptuous homestyle Biryani done.Kokni ,as kokam n homemade fish masala used .,.Yummy!

Ingredients

  1. 1 bowl big prawns deveined washed,apply salt.n kept aside
  2. 8-10baby potatoes.cut halves 2tblspn
  3. 2medium onions chopped fine
  4. 2tomatoes cut or grated
  5. 3-4 pieceskokam fresh or dry curry leaves 5-6
  6. 2tbsp ginger garlic paste
  7. 3 tbsp oil
  8. 2tbsp ghee
  9. 1 cupmilk
  10. as per tastesalt
  11. 2-4bay Leaves
  12. 3-4 Cloves peppercorns
  13. 1 tbsp kashmiri red chilli powder
  14. 1 tbsp cumin coriander powder mixed
  15. 1 tbsp garam masala
  16. 1 tbsp fish masala
  17. 5-6 strandssaffron
  18. 1 cupfried onions

Cooking Instructions

    Heat oil add bay leaves peppercorn stir fry,add kokam curry leaves then and chopped onions to saute add potato halves and ginger garlic paste too

    Stir fry onion potatoes and now add tomatoes and spices and stir fry 5 minutes well

    Add washed prawns now stir well few minutes cover cook on slow 10 minutes for it prawns n potatoes to cook in their juices

    On one side rice boiled ready till prawnsmasala cooks.In a panheat ghee add rice layer.Mix saffron in milk,keep ready.Now add cooked prawn mala on rice layer.well.Cover with one more layer of rice. Add saffron milk on the rice.and put second spread of prawn masala

    Top this one with another layer of rice pour 2-3 spoons of saffron milk.Now put fried onions all over to top
