Ingredients

  • 2 cupquick cooking oatmeal
  • 1/2 tspbaking soda
  • 2 1/2 cupbuttermilk
  • 1 cupflour (plain or all-purpose)
  • 1 tspsalt
  • 1 tspbaking powder
  • 2 tbspsugar
  • 1/3 cupoil
  • 2 mediumeggs (beaten)

Steps

  1. 1

    Combine oatmeal, soda & buttermilk. Let stand (at least) 5 minutes.

  2. 2

    Combine flour, baking powder, salt & sugar. Add to oatmeal.

  3. 3

    Mix oil & eggs into the oatmeal mixture.

  4. 4

    Stir only until blended. Batter will be thick.

  5. 5

    Cook on griddle or skillet over medium heat and ENJOY!
