I'm still searching for healthy meals that fit my diet. But I was really craving meatballs, and since I can't have rice or bread, I came up with this recipe. It turned out delicious. I highly recommend it.

In a bowl, mix the ground meat, eggs, grated carrot, seasoning blend to taste, and finely crushed oregano.

For the sauce: Blend the tomatoes with the bouillon cube and chipotle peppers with their adobo sauce. Once blended, pour into a saucepan and season with salt and chicken bouillon powder to taste. Bring to a boil.

Once the sauce is boiling, keep it on the heat. Shape the prepared meat mixture into balls and gently place them into the sauce to start cooking.

After all the meatballs are in the sauce, cover and cook for 10 minutes so the meatballs cook through.

Turn off the heat and serve.
