This is an improvised recipe that came about because I needed to use up some chicken and an eggplant. As a true Sicilian, I thought of delicious parmigiana!

This is an improvised recipe that came about because I needed to use up some chicken and an eggplant. As a true Sicilian, I thought of delicious parmigiana!

Cut the chicken breast slices into strips. Dredge them in semolina flour with a pinch of salt.

In a large skillet, sauté the chopped onion in a little olive oil, then add the chicken strips.

After a few minutes, add the diced eggplant, tomato purée, 2 cups water, salt, pepper, and oregano. Simmer on low heat for 20 minutes. (Add more warm water if it gets too dry.)

Dice the mozzarella and add it to the pan.

Cook for a few more minutes, turn off the heat, and serve with plenty of grated Parmesan cheese on top.
