Super Easy Madeleines

Madeleines cost 100-200 yen each. But if you make them at home, not only are they additive-free, but they're also cheap. I wanted to eat a lot, because I'm a glutton! Buy cute wrapping packaging at 100 yen (dollar) stores, wrap the the madeleine to give as gifts or sell at bake sales!

-Don't overmix the batter!
-Because it's possible to scorch the sugar (if the egg and sugar lump together), make sure to beat the eggs before mixing in. Also, don't leave the ingredients after you've combined them. Make sure mix right away.
-[Matcha madeleines] Use matcha (10 grams, 5% of the cake flour).
-[Cocoa madeleines] Add 2 tablespoons (12 grams) of cocoa powder (replacing a portion of the cake flour) and bake the madeleine as usual.
-[Chocolate madeleines] Use 110 grams of butter and 90 grams of chocolate and bake the madeleines as usual (melt the butter in a double boiler, and melt the chocolate shavings). Recipe by Kerii dooruko

Ingredients

18 servings
  1. 200 grams┌① Cake flour
  2. 200 grams├① Powdered sugar
  3. 1/2 tsp├① Baking powder
  4. 1 pinch└① Salt
  5. 4┌② Egg
  6. 6drops └② Vanilla oil
  7. 200 grams③ Butter (unsalted)

Steps

    Whisk the dry ingredients in a bowl (or sift for similar results).

    Add beaten eggs and the vanilla oil and whisk all the ingredients together. (Stop mixing when the dry ingredients are incorporated).

    Add melted butter in three batches, stirring well with a rubber spatula after each addition.

    Optional: If you let the batter rest in the fridge for 30 minutes, it'll make the cakes more delicious (I put the batter in a piping bag and let it chill).

    Coat the molds with butter, dust with flour and shake off the excess. Fill the molds with the batter (about 3/4 since the cake will rise in the oven).

    Preheat the oven to 390°F/200°C. Place the madeline mold into the oven. Reduce the temperature to 350°F/180°C and bake for about 17 minutes (depending on your oven and the mold, baking time may be between 15-20 minutes).

    Scallop and heart shaped.

    The madeleine moulds (shell, heart, bear, scallop, rose and tart) can easily be bought online. If you want to make cake-like madeleines, use a tart mould. If you want tiny ones with an elevated centre, choose a deep mould.
