Cooking Instructions

Open and drain the can of tomatillos. If using fresh tomatillos, peel the leaves and stems, then boil until soft (about 8 minutes) and drain. Add to food processor.

Chop the leaves off the cilantro, discard the majority of the stems. Add to the food processor.

Rough chop the onion, add to processor.

Scoop out the avocado into the food processor (minus the pit of course!).

Squeeze the limes and any fruit flesh into the mix as well.

Chop the peppers, discarding the stems, and ad them as well. Two peppers make a nice background heat, so the flavor is mixed in with the rest of the ingredients.

I use about five dashes of salt.

Blend all ingredients until smooth. Makes about 1-2 quarts.
