Serves 10 (1 bowl per person)
  1. 1 packagedried red beans
  2. 8 1/2 cupswater (about 2000 ml, divided)
  3. Toppings:
  4. Sugar (optional)
  5. Goji berries (optional)

90 minutes
  1. 1

    Place the red beans in the inner pot of a Tatung electric cooker and rinse well.

    Add 5 cups water (about 1200 ml) to the beans in the inner pot. Pour 1/2 cup water (about 125 ml) into the outer pot of the cooker. Close the lid and start cooking.

    When the cooker switches off, let it sit for 10 minutes. Open the lid, add another 1/2 cup water (about 125 ml) to the outer pot, close the lid, and cook again. After it switches off, let it sit for another 10 minutes. Open the lid, stir the beans, and check if the water has been absorbed. Add 3 1/3 cups water (about 800 ml) to the beans, close the lid, add another 1/2 cup water (about 125 ml) to the outer pot, and cook one more time. Let it sit for another 10 minutes after cooking.

    Pour the soup into bowls and add your preferred toppings.
