Beef/Lamb Jalfrezi
This works with any meat.
Steps

Heat oil in a pan, add onion and pepper and fry until golden/blistered. Pepper should be most of the time skin side down.

Add garlic ginger paste and cilantro stems, keep stirring.

Lower the heat and add all spices and bloom/fry for 30 secs.

Increase heat, add tomato passata and cook until oil separates (1 min).
- 5
Add a bit of curry base, stir until it bubbles (30 secs).
- 6
Add a cup of curry base, cook for 1-2 mins until bubbles form again.

Add the rest of the curry base, lower the heat and add pre-cooked meat and green chili.

Let simmer for 5 mins, add curry base if too thick.

Add cherry tomato and cook until soft.
- 10
Garnish with chopped fresh cilantro.
