Chicken and tuna sandwich

Made this for the kids lunch packs from left over grilled shredded chicken .

Mix grilled shredded chicken in a bowl with mayyonaise and a little onions. Do not season as your grilled chicken is already well seasoned.

Mix tuna with thousand island dressing. Season to your taste and sprinkle white pepper.

Spread mayyonaise or butter on your base (bread), add your grilled chicken mix then cover with the top(bread). Spread butter over the top bread. Lay a leaf of lettuce.

Take another base, spread with mayyonaise or butter. Add your tuna and thousand island mix. Cover with top (bread). Put the tuna sandwich over the lettuce covered chicken sandwich.

Slice diagonally to get two yummy juicy sandwiches.

I saw a fabulous steak sandwich recipe from youtube. The original one using skirt meat, and sun dried tomato mayonnaise, but since I have romaine lettuce left over and some tomatoes that urgently need to be cooked, and KFC chicken breast that bought by my hubby. So, voila!! I made this easy "cheat" reuben sandwich with leftover meat, cheese, & bread from my #reubencasserolebake but I didnt have any leftover #russiandressing or sauerkraut. I did however, have a jar of "Traditional Polish Salad" which is basically sauerkraut with the addition of carrot, red pepper, & onion. I also used a handy "Burger King, Zesty Sauce" container in place of a more traditional reuben sauce. Further, I just happened to have both sliced & shredded swiss cheese handy as I had recently used them in a casserole. However, one or the other would also work just fine.👌

I was craving Wendy’s , and I had coupons too. But made this instead. I left off some ingredients for the picky eater,. And I added all of that to my sandwich. This took no time, and I made homemade fries right along with my chicken as I air fried them , was only cooking for two . This was our lunch way cheaper than hitting up a fast food joint .
