Ingredients

3-4 people
  1. 3sirloin steaks
  2. 1egg
  3. 4 tbspcornflour
  4. 1/4 tspsalt
  5. 1/4 tspblack pepper
  6. 1/8 tspwhite pepper
  7. Oil for frying (vegetable, sunflower etc)
  8. 1onion thinly sliced
  9. 1red chilli finely sliced (I kept seeds in for extra heat)
  10. 1 tspminced/grated ginger
  11. 3garlic cloves finely chopped
  12. 2 tbsprice wine vinegar
  13. 3 tbspdark soy sauce
  14. 2 tbsptomato puree
  15. 6 tbspcaster sugar
  16. 2 tbsptomato ketchup
  17. 2 tbspsweet chilli sauce

Cooking Instructions

    Freeze steaks for half hour then finely chop them into thin strips and remove as much fat as possible.

    Place the steak strips in a bowl and add an egg. Mix thoroughly then add the cornflour, salt, white and black pepper. Mix thoroughly again.

    Get a pan (or two) on a high heat with a little oil. Fry the steak for 2-3 minutes on each side but don't be tempted to keep turning. This helps make them crispy.

    You may need a couple of batches. Once the beef is cooked, place it in a kitchen paper lined bowl.

    Turn heat to medium, add a little more oil and add the garlic, ginger and onion. Cook for 2 minutes then add red chilli and cook for another minute or so. Then add all sauce ingredients and allow to bubble and reduce for few minutes.

    Add the beef back in, give it a stir and heat through for 1-2 minutes - until the beef is hot.

    Serve with boiled rice, egg fried rice or noodles
