Basically just throw ingredients into a large bowl as you run down (go through) the recipe, fold together and serve. It doesn't get much better than this- enjoy!

I usually cut up what I have on hand, and add mint, which I take from my planter. Real Greek salads contain garlic, but since I don't like the smell, I make it without. This makes for a protein packed, fresh lunch. Perfect for if you have some leftover quinoa sitting in the fridge. It keeps for a few days, so it's good for meal prepping. It's also easy to customize it to your liking. If you're not a fan of quinoa, I'm betting this would be really good as a pasta salad, or over some chopped romaine. If you'd like to take the 'bite' out of the raw onions, then soak them in some cold water for a few minutes before adding them. Christina
