Easy & Homemade Sauce for Chilled Chinese Noodles

I use 3 servings of chilled Chinese noodle packets (together in 1 package) that they serve in the supermarkets. For a 4 person family, you can buy 2 packages of 3 servings, but there will always be 2 servings leftover.
I made enough homemade sauce to make up for what you don't have.
You can change the ratio of ingredients to your preferences. I think it's fun to try to find your favorite taste. Recipe by hirokoh

When you have the time, place the ingredients into a pot and bring it to a boil. Use it after it has cooled. When making this for children, omit the Japanese mustard.

When you are really pinched for time, mix all of the ingredients really really well, but only if you're in a rush.

I recommend substituting doubanjiang or gochujiang for the Japanese mustard for a slightly different spin of the dish.
