Italian potato skins

I had a couple of cold jacket potatoes in the fridge along with a bunch of leftover bits from making pizzas at the weekend. I decided to combine the two in this Italian inspired potato skin recipe.

I had a couple of cold jacket potatoes in the fridge along with a bunch of leftover bits from making pizzas at the weekend. I decided to combine the two in this Italian inspired potato skin recipe.

Hollow out the potato skins and place in a bowl.

Cut the cherry tomatoes in half and microwave for 60 seconds to partially cook and soften them. This makes them easier to stir into the mix later.

Roughly chop the basil and slice the spring onions.

Add all the chopped ingredients, half the grated mozzarella, and a glug of olive oil into the bowl with the potato and mix well. Season with salt and pepper.

Spoon the potato mixture back into the potato skins.

Top the potatoes with the remaining mozzarella and sprinkle with paprika. This really helps to ensure they go a rich golden brown in the oven. Bake at 200oC for 20 mins

I served mine with a side salad and a drizzle of balsamic vinegar glaze.
