I often make this little chicken sauce using leftover chicken (and homemade chicken stock if I’ve had time to make some). I know it doesn’t look very impressive but the children love the mild flavour and it’s creamy and comforting despite being gluten and dairy free. I often make this little chicken sauce using leftover chicken (and homemade chicken stock if I’ve had time to make some). Start by gently sweating the onions and garlic in the olive oil for about 10 minutes.

Sprinkle over the flour and stir it into the onion mix. Then start slowly adding the stock to thin it back out.

I switch to a whisk here and use that to prevent lumps forming while I add all the stock. Turn the heat up and bring it to a boil. Stir while the sauce thickens.

Let it bubble for a few minutes while stirring up cook out the flour. Then turn the heat down and stir in the almond milk.

Add the leftover chicken and salt and pepper to taste. You can add cooked veg like peas here too. That’s it! My kids like it with rice, pasta or mash.
