Roasted cauliflower and chickpeas

I ate a similar recipe in a restaurant in Greece, really loved it and tried to recreate it. I am very happy with the result!
You can play with the quantities of the different ingredients and add/remove if you want. Add some courgettes, or aubergines for example.
This is the recipe as I did it, using whatever I had in my fridge.

Wash the cauliflower and cut in very small pieces. Put it in a big bowl, add the chickpeas, the carrot (grated) and the onion (sliced)

Add all the spices and the olive oil and mix well

Put everything in a pan, so that it's evenly spread out. Put it in the oven until the food is done and the cauliflower has a nice golden colour (I put it in 180ºC for 35 min)

For the yoghurt sauce: just mix everything together

Serve with 1-2 big tbsp of yoghurt sauce (or just plain if you don't eat yoghurt)
